Bean Salad with Mozzarella Recipe

This is a very tasty vegetarian starter recipe which is perfect for vegetarians. The salad vegetables taste wonderful with the mixed beans and the coriander adds a fragrant finish. This is a great starter recipe to have before a Mexican meal.

Mozzarella and Bean Salad

Ingredients -

220 g can kidney beans, drained
410 g can chick peas, drained
4 tablespoons vinaigrette or Italian dressing
125 g cherry tomatoes, in quarters
1 red pepper, de-seeded and sliced finely
½ cucumber, finely diced
150 g mozzarella, sliced and cubed
2 tablespoons fresh coriander, finely chopped

Preparation:

Combine the chick peas, kidney beans, cherry tomatoes, pepper and cucumber and add the dressing. Stir in the cheese and sprinkle with the coriander.
